Rice Patties

So, you have made some fabulous risotto and have a little left over, I beg you, do not throw it out! In our household, leftovers are our salvation. Rice patties, rice cakes, rice balls, "polpette di riso", they all mean the same thing... Great finger food!  

My biggest problem is that I have to refrain from eating all the patties whilst I'm cooking them!
 
You need:

a bowl of leftover risotto-any risotto will do
some breadcrumbs
some parmiggiano cheese
chili powder (optional)
peanut oil for light frying

Get the bowl with the left over risotto and place in a larger bowl. Add a little breadcrumbs so that the rice binds together and is not so moist. Sometimes, you can even add some parmigginao cheeese, or some chili powder. I have a left over Risotto with Radicchio, Prosecco and Baby Lagoon Prawns, so I am only adding some breadcrumbs, and a bit of parmiggiano.
On your counter top, have already ready, a plate with some breadcrumbs, and a bowl with some water.

Moisten the palms of your hands a little, now, using a tablespoon, scoop out some rice, form a little pattie, and then roll in the breadcrumbs. I also like to flatten them a little, they resemble tiny burgers!
Heat a tiny amount of peanut oil in a pan, and add the patties, cook until golden brown. Remember, the rice and all the ingredients are already cooked, so all you need to do is heat a little. 



And, it is best to have the cooked patties rest a little, so that they are less crumbly.

Now, let gobble them up!
